Yield:
  • 1 bunch kale (remove stems)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red peppers
  • 2 cans white beans, drained and rinsed
  • 4 cups vegetable broth
  • Salt and pepper

Directions

  1. In a large pot heat oil over medium heat
  2. Add onions, garlic and crushed red peppers; cook until onion is softened, about 3 -4 minutes
  3. Pour in vegetable broth; bring to a boil and reduce heat to low
  4. Stir in white beans and kale; cook until kale is tender, about 20 minutes
  5. Season to taste with salt and pepper
  6. Optional: Garnish with croutons and Parmesan cheese
