Almost-Instant Black Bean Soup

This recipe is incredibly quick and simple to make but it tastes quite complex! Makes a perfect lunch.

Ingredients

Servings: 2
Yield:
  • 1 medium onion, chopped
  • 1 tbsp olive oil
  • 15oz can of black beans, rinsed
  • 1/2 small jar of salsa
  • vegetable broth (approx. 1 cup)
  •  
  • Optional toppings

  • avocado
  • grilled corn
  • cilantro
  • grated cheese
  • green onions
  • sour cream

Directions

  1. Heat the olive oil in a large pot. Add onion and cook until softened, about 6-7 minutes.
  2. Set aside 1/2 cup of the black beans.
  3. Combine the remainder of the black beans, and salsa in a food processor. Whirl until unrecognizable.
  4. Add to the pot, along with enough vegetable broth to get a texture that works for you. Add the black beans.
  5. Simmer for about 20 minutes. Divide into bowls and add optional toppings.

Notes & Tips

Notes & Tips: Rinsing canned black beans is a must because it gets rid of extra sodium that's used during the packing process. Pour the beans in a colander and run cold water over them until it stops foaming. Then use as directed.
