  •  
  • 1 head of broccoli (plus trimmed stalk) separated into florets
  • 1/4 red onion, finely chopped
  • 1 English cucumber, peeled and sliced
  • 1 orange pepper, chopped
  • 2 carrots peeled and sliced
  • handful of cherry tomatoes
  • 1 zucchini, sliced
  • 2 celery stalks, chopped
  •  
  • dressing

  • 1/4 cup canola oil
  • 1/8 cup olive oil
  • 1/2 cup apple cider vinegar
  • 2 garlic cloves
  • 1 tbsp sugar
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • 1 tbsp lemon juice
  • 1/2 tsp dry mustard powder

Directions

  1. Assemble salad ingredients in the biggest bowl you can find and set aside.
  2. Whirl dressing ingredients in a blender and pour over the vegetables. Toss thoroughly and refrigerate overnight. This salad gets better the longer it sits!
