1 head of broccoli (plus trimmed stalk) separated into florets

1/4 red onion, finely chopped

1 English cucumber, peeled and sliced

1 orange pepper, chopped

2 carrots peeled and sliced

handful of cherry tomatoes

1 zucchini, sliced

2 celery stalks, chopped

1/4 cup canola oil

1/8 cup olive oil

1/2 cup apple cider vinegar

2 garlic cloves

1 tbsp sugar

1 tsp sea salt

1/2 tsp pepper

1 tbsp lemon juice

1/2 tsp dry mustard powder

Directions

Assemble salad ingredients in the biggest bowl you can find and set aside.

Whirl dressing ingredients in a blender and pour over the vegetables. Toss thoroughly and refrigerate overnight. This salad gets better the longer it sits!
