Ingredients

Yield:
  • 1 teaspoon extra virgin olive oil
  •  
  • ½ small onion, peeled and thinly sliced
  •  
  • 1 garlic clove crushed
  •  
  • 1 large roasted red bell peppers, cored, seeded and thinly sliced
  •  
  • 4 panini rolls, split
  •  
  • 1 Tblsp olive oil
  •  
  • ½ lb ham sliced thinly
  •  
  • ¼ lb provolone cheese, thinly sliced
  •  
  • 1 cup chopped fresh baby spinach

Directions

  1. a small sauté pan over medium heat sauté onion and garlic in 1 tsp olive oil until onion is translucent; add roasted red pepper and cook until it is softened.
  2. Brush each cut side of the rolls with olive oil and lightly salt and pepper.
  3. Assemble sandwiches using ham, cheese, spinach and sautéed vegetables.
  4. Lightly brush outside of assembled sandwiches with remaining olive oil.
  5. Cook until done, about 4-8 minutes.

Notes & Tips

Notes & Tips: An alternative to the Griddler or the George Foreman is…using 2 frying pans; place one on top of the panini; weigh it down with several heavy cans. Cook for a couple of minutes, remove the top frying pan, and flip the sandwich.
