Yield:
  • 3 medium zucchini (or 1 monster zucchini)
  • 2 tbsp flour
  • 2 large eggs, beaten
  • 1.5 cup panko (or breadcrumbs)
  • 2 tbsp grated Parmesan
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1 tbsp thyme
  • Salt and pepper

Directions

  1. Preheat oven to 425 F
  2. Line a baking sheet with parchment paper and lightly grease or spray with cooking spray
  3. Cut zucchini into sticks
  4. Bowl 1: add eggs and beat until frothy
  5. Bowl 2: add flour
  6. Bowl 3: add panko, grated Parmesan, paprika, garlic powder, thyme, and sprinkle with salt and pepper
  7. Roll zucchini sticks in the flour, then dip them in the egg until coated, and then coat them in panko mixture
  8. Arrange zucchini sticks in a single layer on the baking sheet
  9. Bake for 15 minutes, turning the zucchini fries halfway through
  10. Serve with your favorite dipping sauce (my personal favorite is garlic-lemon mayo)
